Mom's Cucumber Jellied Salad
1 small lime Jello
1 tsp salt
1 cup boiling water
2 Tablespoons vinegar
1 English cucumber
1 cup sour cream
1/2 cup mayonnaise
2 tsp grated onion
Paprika
Parsley
Combine salt, jello powder and boiling water til dissolved.
Add vinegar.
Chill til thickened.
Meanwhile, grate the cucumber and onion. Let sit in a sieve so it drains well.
Blend sour cream/mayo mixture into jellied mixture.
Fold in the cuke and onion.
Chill til firm.
Sprinkle with the parsley and paprika.
***I always double this recipe and it turns out fine. Also, it's nice to slice very fine cucumber and set it around the dish so only 1/2 of the slice shows. This recipe has a nice zip to it with the onion flavor. Hope you enjoy.
